Tamarind is indigenous to tropical Africa. However, it has been grown in India for such a long time that at times it is reported to be indigenous there. Tamarind grows in the wild in Africa covering countries such as Cameroon, Malawi, Nigeria, Tanzania, Sudan, Zambia and many others.
To make tamarind juice, you will need….
1 cupful dry tamarind; 4 cups water; ¼ cup sugar.
To prepare it….
Soak the tamarind fruit in a cupful of water for a few minutes and mash the fruit into a paste. Sieve out the seeds and fibres. Heat the paste in 3 cups of water and add the sugar until it dissolves over low to medium heat. If the fruit is too sweet, add less sugar according to your taste. Once the sugar is completely dissolved, out in the fridge to cool. Once chilled, serve the juice with ice cubes and add lime to garnish your thirst quencher!
