You will need….
300g dried Kapenta; 1 chopped medium; a handful of chopped red, green & yellow bell peppers; 1 large onion; 2 chopped medium tomatoes; 1 tsp lemon and herb spice; 1 tsp fish spice; 1 tsp curry powder; a pinch of salt; olive oil
To prepare ….
Soak the kapenta in tepid water for 10 to 20 minutes, until the fish become tender. Drain the water and stir fry the kapenta in olive oil. Keep stirring until the fish is golden brown then add the chopped onion, the peppers and all the spices with a bit of salt. Next add the chopped tomatoes and allow to cook with a bit of water (about a quarter of a cup). Simmer and allow the sauce to thicken then serve with pap (nsima, sadza, ugali).
